Canning is a process of sterilization and preservation of the truffle, as well as its many taste and olfactory qualities. The truffle, this diamond of our terroirs, comes in all its forms: extra, brushed 1st choice, in pieces, in peels, broken pieces and in truffle juice.
This truffle with intense flavor has been selected for its quality and carefully brushed before being sterilized. It is thus ready to be used, passed through the mandolin, the grater truffle , or with a microplane for a broken effect, just before serving. It can also be accompanied by a juice of truffle .
