Located in the heart of Aubrac, Jeune Montagne produces Aligot de l'Aubrac and Tome Fraiche de l'Aubrac. It is also the main producer of Laguiole AOP cheese made from raw and whole milk.
The Cheese Cooperative perpetuates the traditional know-how inherited from the monks and buronniers of Aubrac. Retortillat is the truffade of Aubrac: the delicious marriage between fried potatoes, fresh tome made with raw milk from Aubrac and matured Laguiole AOP.
The fresh tome brings stringiness and cheese taste, the matured Laguiole forges the character of this traditional dish.
