Since the 19th century, the Cavalieri family has cultivated exceptional durum wheat in Puglia, southern Italy. After an agricultural crisis in 1861, they turned to wheat exports, and then, in 1918, to the production of exceptional pasta. Renowned for its unique crunchy texture, their pasta benefits from carefully selected flour and innovative processes, including bronze molds that respect the dough. Slow drying using the Cirillo method at low temperatures preserves its nutritional qualities and ensures perfect cooking.
