Salers AOP with raw milk ±1kg

Salers is an appellation designating a French cheese made from raw cow's milk with uncooked pressed dough from the Cantal department.

It is a firm cheese, with a dry, thick and flowery rind.

Its fat content is 44% minimum.

It comes in the form of a cylinder of variable dimensions, from 38 to 48 cm in diameter, weighing from 35 to 55 kilograms.

It is identified by a red plaque and by an imprint engraved on one side of the Salers-Salers cheese.
