The Sainte-Maure de Touraine is pierced with a straw in its center, along its entire length.
This rod is used to hold the cheese and prevent it from breaking. The PDO requires the introduction of a pyrographed rye straw in the center of the cheese after it is unmolded.
It includes the producer's identification number and the name of the cheese. Like many goat cheeses, Sainte-Maure can be enjoyed plain or gratinated on bread.
