While digging a cellar beneath his house, he discovered "fleurines," natural cracks in the Combalou mountain range that provide ideal ventilation for maturing Roquefort. An independent family business, Coulet remains steeped in tradition, utilizing ancestral cellars and modern equipment. Their Roquefort is recognized in France and abroad as a symbol of French gastronomy. Additionally, their collection includes wheels of organic sheep's milk cheese infused with truffles, wild garlic, and Espelette pepper, perfect for special occasions.
