Le Mans Farm Pork Rillettes.

A traditional recipe from the Sarthe region, a layer of covering fat protects them from the air and allows them to be preserved.

Their cooking for several hours and the particular care taken in browning gives a subtle preparation. A set of complex aromas is then expressed where the scents of juices from the slightly caramelized meat, ample notes and a slightly peppery base are mixed.
