This pepper, once ground, has a fine and delicate flavor, which is perfect for fish sauces, and sauces based on cream and butter.

It's not a hot pepper. Animal and leather notes are perceptible on the whole grain.

Once ground, the grains give way to more delicate flavors with umami.
