Bergamot is an acidic citrus fruit, the fruit of the bergamot tree, a hybrid tree between the lime tree and the bitter orange tree. A small tree three to four meters high, the bergamot tree appreciates the warm Mediterranean climate and its fresh and tangy notes evoke the terroir of the Riviera. The best essence of bergamot is extracted in Southern Italy, where 95% of the world's production is naturally found.
