Bonito flakes (a cousin of tuna) are a central ingredient in Japanese cuisine.

They are made using a fine grater, then fermented, lightly smoked and finally dried, which gives them an intense flavor.

These flakes enhance, for example, miso soups, udon, dashi and are only limited in their use by your imagination.
