For over 40 years, the Vincensini family has been raising and processing Nustrale pigs in Castagniccia, a fertile, mountainous region in the central northwest of Corsica. These hardy pigs, known for their small size and black coat, are fed a seasonal diet of leaves, grasses, roots, chestnuts, acorns and locally produced barley.

Traditional Corsican dry sausage, made from lean shoulder meat and a layer of fat, has a delicate flavor with hints of hazelnut and a firm, creamy texture. A special flora grows naturally on the casing, influenced only by the conditions in the cellar.
