For four decades, the Vincensini family has been perpetuating the art of Corsican charcuterie by raising Nustrale pigs in the fertile lands of Castagniccia. These hardy animals, recognizable by their compact build and black coats, feed on a rich seasonal diet: leaves, wild herbs, roots, chestnuts, acorns, and locally grown barley. This traditional lonzo, made from lean shoulder meat and its fatty casing, reveals a subtle, nutty flavor with a texture that is both firm and smooth. A natural flora develops delicately on the casing, shaped solely by the unique climate of the aging cellar.
