Since the 1800s, the Cavalieri family has been cultivating high-quality durum wheat in Puglia, southern Italy. After an agricultural crisis in 1861, they turned to wheat exports and, in 1918, to the production of exceptional pasta. Renowned for its unique crunchy texture, this pasta owes its finesse to Benedetto Cavalieri, who valued the quality of the flour and technical innovation. The dough is worked in bronze molds, respecting its structure, then slowly dried according to the "Metodo Cirillo" at low temperatures, ensuring the preservation of its nutritional qualities and perfect cooking.
