A mild, semi-hard cheese from the island of Cyprus, made from goat's and sheep's milk, Halloumi has an astonishing ability to retain its shape and not melt when cooked.

It can therefore be eaten fresh, grilled or fried, in salads or as an accompaniment to traditional Cypriot main dishes.
