A soft, semi-hard cheese from the island of Cyprus, made from goat's and sheep's milk, Halloumi has an astonishing ability to retain its shape and not melt during cooking.
It can therefore be enjoyed fresh, grilled or fried, in salads or as an accompaniment to traditional Cypriot main dishes.
