Cooked according to a traditional recipe from the South-West, these gizzards are salted then slowly cooked in duck fat to develop the creaminess and taste of the gizzards. To fully appreciate this specialty, we suggest reheating the can in a bain-marie for 30 minutes to melt the fat, then pour the gizzards into a frying pan with a little duck fat, and heat over low heat for 5 to 10 minutes. Drain and serve hot in a salad.
