A specialist in semi-cooked foie gras for 30 years, Tradition & Gourmandises is a subsidiary of Soulard, a duck breeder in Vendée since 1936. It works with the liver of male mulard-type ducks raised outdoors in the Herbiers de Vendée, with a 100% plant-based diet of French origin. With a temperate climate all year round, the Vendée region offers a natural breeding environment without stress, in large meadows, without heat peaks. This integrated sector also allows indisputable traceability. After 12 weeks, the corn force-feeding stage takes place at the rate of two meals per day in an air-conditioned room with subdued light. Extracted hot and cooled quickly, the finest livers are then sorted and shipped overnight to Tradition & Gourmandises to be processed "by hand" following exclusive traditional recipes in high-precision equipment guaranteeing exemplary regularity.
