Smoked herring fillets - mild - Label Rouge - 200g

In Boulogne-sur-Mer, between November and December, during the traditional “Herring season”, fishermen go looking for it as it runs along the Opal Coast during its annual migration.

In one night, Boulogne fishermen can haul in several tonnes of herring in their nets, within the strict limit of regulatory quotas, the fishery being MSC certified.

A few hours later, the coastal herring is salted then carefully preserved within the JC David Establishments in order to be carefully prepared.
