In the meat world, is veal considered white or red? Simply put, it can be both. While it is generally considered a red meat like beef, it is myoglobin, an iron-rich pigment, that gives the meat its red color, and it appears during prolonged muscular exertion. However, young calves feed exclusively on iron-poor breast milk, which limits myoglobin production and results in very pale flesh. As the calf matures, its varied diet and active lifestyle increase myoglobin, giving it a pinkish to red color.
