In the world of meat, is veal considered white or red? Simply put, it can be both. Although it is generally considered a red meat like beef, it is myoglobin, an iron-rich pigment, that gives meat its red color, and it appears during prolonged muscular effort. However, young calves feed exclusively on iron-poor maternal milk, which limits myoglobin production and results in very pale flesh. As the calf grows, its varied diet and active lifestyle increase myoglobin, giving it a pinkish to red color.
