This cheese has been matured using the traditional method, which includes four days at 16°C to fully develop its aromas, followed by extended ripening at 8°C. This approach gives the cheese a more supple texture and optimizes its consistency during cooking. This is known as "hot ripening," as opposed to the "cold ripening" method, which takes place at 4°C.
