Black garlic is the product of garlic fermentation at high temperatures for several weeks. This process creates a slow caramelization, also called Maillard reaction: the garlic becomes soft, creamy, black with a concentrate of Umami, this 5th flavor so sought after in haute cuisine. Black garlic reveals aromas and exalts the senses thanks to its notes of licorice and balsamic vinegar.
Ingredients: Black garlic (70%), sunflower oil, water, acid (lactic acid)
Recommendation for use: 50g for 500g of preparation
