The Causses du Quercy Regional Park is home to the “Causses du Quercy” sheep breed, which is perfectly adapted to the sparse vegetation of the vast limestone expanses. It is distinguished by its circular black spots that look like glasses. This high-end PGI lamb is the first meat to obtain the Label Rouge. Raised for at least 70 days by its mother, it is fed a mixture of cereals and plant foods. Only one in three lambs, of U, R or O conformation, will obtain the PGI. The youngest animals (maximum 150 days) will receive the Label Rouge. Its pale and succulent meat is perfect for cooking in the oven or on a spit.
