Located in the Spanish province of León (a mountainous area in the northwest of the country), Pajariel is the first regional producer of “cecina de León”, or dried beef. Founded in 1945, the Pajariel estate takes its name from a local mountain, Monte Pajariel, in the El Bierzo region, in the west of the province of León.
