With its more defined rind and golden interior, Cantal is quite easily recognizable. Old Cantal has fruitier and more persistent aromas than young or medium-aged Cantal. Its interior is also darker and more crumbly: in short, more character for more pleasure!

Matured for over 8 months, its thick rind shelters a darker paste, it is without doubt the Cantal of connoisseurs and epicureans, enriched with persistent peppery and spicy aromas for a strong and assertive character...
