Maison Entrecasteaux, an artisan confectioner for 130 years, is one of the oldest calisson factories in the region.
Ancestral Recipe: These calissons are made with melon from Provence, blanched almonds from the Mediterranean basin and candied fruits from Apt. All finely crushed according to pure tradition, placed on a bed of hosts then delicately topped with royal icing.
The calisson d'Aix is one of the 13 Christmas desserts in Provence.
