The Isigny-Sainte-Mère Cooperative operates within a 35 km collection area encompassing the Cotentin and Isigny-sur-Mer regions. This generous grassland terroir produces exceptional milk, a veritable source of butter and cream, thanks to alluvial-rich soils, a temperate climate with 170 well-distributed days of rain, mild summers, and mild winters. This unique environment gives the milk a richness in minerals, trace elements, and oleic fatty acids. The dairy, owned by the producers, processes this fresh milk in less than 48 hours using traditional methods.
