Made from raw cow's milk, Appenzeller Extra represents the richest expression of Swiss cheeses. Rooted in an Alpine tradition spanning over 700 years, it exudes floral and nutty pre-Alpine aromas. Aged for eight months, each wheel is carefully brushed three times a week with a brine infused with floral essences, the recipe for which remains a closely guarded secret. Its firm yet creamy texture reveals a mild and lingering flavor that unfolds on the palate, unveiling a complex array of fruity notes.
