Made from raw cow's milk on a small farm in the heart of Auvergne, this Saint-Nectaire is a true treasure of excellence. Its semi-firm, uncooked pressed paste is supple but does not lose its shape. As it matures, its bloomy rind can become covered with white, yellow or red spots. The rich, earthy aroma of this cheese evokes memories of the terroir and its characteristic flavors. Presented uncovered, the Saint-Nectaire bears a label of excellence with a green casein label, elliptical for the artisanal version and rectangular for the dairy version.
