Made from raw cow's milk on a small farm in the heart of the Auvergne region, this Saint-Nectaire is a true treasure of excellence. Its semi-firm, uncooked pressed paste is supple yet retains its shape. As it matures, its bloomy rind may develop white, yellow, or red spots. The rich, earthy aroma of this cheese evokes memories of the land and its characteristic flavors. Presented uncovered, the Saint-Nectaire bears a mark of excellence with a green casein label, elliptical for the artisanal version and rectangular for the dairy version.
