The gourmet black diamond, also known as the Périgord Black Truffle, grows in the spring and begins to swell from mid-August. The harvest (or "gathering") of Tuber Melanosporum takes place from mid-November to March, when it is available for sale. We recommend consuming fresh truffles within a few days of receiving them to fully appreciate their exceptional flavor. Produced in France, one truffle weighs approximately 50g.
