The gastronomic black diamond, also called the Périgord Black Truffle, grows in spring and begins to swell from mid-August. The Tuber Melanosporum is harvested (or "caved") from mid-November to March, when it is available for sale. We recommend eating fresh truffles within a few days of receiving them to fully enjoy their exceptional flavors. Produced in France, one piece weighs ≃ 50 g.
