This Per Diou farmhouse cheese made from raw goat's milk, handcrafted in Béarn by Saloirs de Louis, features an uncooked pressed paste with an ivory color, supple and dotted with small alveoli. Its natural rind gradually takes on shades ranging from ash gray to orange-yellow depending on its maturation. When tasted, it offers a subtle balance between fruity sweetness and intense goat aromas, an authentic reflection of its terroir of origin.
