It is the Savoie cheese par excellence. It is an uncooked pressed cheese weighing approximately 1.6kg.

The crust, which is always gray, is covered with yellow or red mold and is sometimes pierced with holes, like the dough.

It has a clean taste, with delicate and subtle aromas.
