In the heart of the Auvergne region, at an altitude of 1,000 meters in the volcanic regional natural park, the Fromagerie des Monts du Cantal has been perpetuating the art of raw milk cheesemaking since 1928. It showcases milk from the Cantal PDO area and the surrounding mountain ranges, sourced from 40 producers committed to sustainable and environmentally friendly practices. The cheese dairy adheres to a stricter HAUT HERBAGE (High Pasture) specification than the PDO, with an exclusive diet of grass, hay, and certified high-quality supplements, milk collection within 24 hours, and meticulous artisanal production. The cheeses are made in Pierrefort and then matured in three cellars, including the renowned Saint-Poncy cellar, housed in a former railway tunnel.
