In the heart of Auvergne, nestled at an altitude of 1000m in the volcanic regional natural park, the Fromagerie des Monts du Cantal has been perpetuating the tradition of raw milk cheese since 1928.
She works with milk from the AOP Cantal area and in mountain areas collected from 40 producers in a sustainable approach that respects the environment.
What's more, the cheese dairy has developed a HAUT HERBAGE approach with specifications that are even stricter than those of the AOP Cantal (feed only grass and hay and certified noble supplements, collection within 24 hours, specialized and artisanal production: passage through the tome press, long maturation, ripening in the cellar, selection, traceability, etc.).
The cheeses are made in Pierrefort and matured in three cellars, including the famous Saint-Poncy cellar built in a former railway tunnel.
