A Swiss PDO cheese made from whole raw cow's milk, this cylindrical Tête de Moine has a semi-hard paste and a subtly refined flavor. Uniquely, it is not sliced, but grated into thin rosettes using a girolle, thus fully revealing its airy texture and delicate aromas through contact with the air.
