Soumaintrain is a raw cow's milk cheese with an orange paste, presented in a round shape and protected by a wooden box to preserve its creamy texture. Originating from the village of the same name in the Armance Valley in the Yonne region, it dates back to the 12th century. Its ripening method, similar to that of Époisses, is distinguished by the exclusive use of water rather than alcohol.
Matured for 7 to 8 weeks, this cheese reveals its full aromatic richness when enjoyed plain, sprinkled with a light twist of pepper.
In the kitchen, it pairs wonderfully with a green salad and warm croutons.
