Guyader smoked salmon and trout are prepared according to ancestral traditions. After fresh filleting, they are seasoned with dry salt, carefully washed and dried, then cold smoked for 5 to 8 hours using beech wood. A maturation period of approximately 24 hours, adapted to their size, humidity, and fat content, ensures their finesse. Sliced ​​by hand by experts or by machine without rigidity, they are packaged and shipped just in time, guaranteeing optimal freshness and rigorous traceability.
The salmon is hand-cut to deliver a distinct texture, combining firmness and softness. Free from brown flesh, it guarantees an elegant and refined taste experience.
