A true classic of Lyonnaise cuisine, the pistachio brioche-wrapped saucisson combines generous charcuterie with soft, indulgent pure butter brioche dough.

Since 1995, Maison Bolard has specialized in making pastry-wrapped charcuterie. Its products are made at its sites in Saint-Amour in the Jura and Chaponnay in the Rhône, combining large production volumes with respect for traditional know-how.

This recipe consists of 60% premium pure pork pistachio saucisson for cooking and 40% pure butter brioche dough. The 2% pistachios add their delicate flavor, a touch of crunch, and a lovely splash of color to the filling.

Served hot, the brioche-wrapped saucisson fully reveals the contrast between the character of the pistachio charcuterie and the softness of its pure butter brioche.

As a starter, serve a few slices with a green salad. For a more generous dish, serve it with vegetables and a mushroom sauce or marchand de vin sauce. It is also perfect for buffets and aperitifs, sliced. For a more original tasting experience, the slices can be lightly warmed in a toaster to restore the warm, slightly crispy brioche.
