Morteau sausage to cook PGI – Salaisons Premier Plateau – 350 g

A great specialty of Franche-Comté cuisine, this PGI Morteau sausage to cook is made by Salaisons Premier Plateau in Équevillon, near Champagnole, in the heart of the Jura’s first plateaus.

The company upholds traditional charcuterie expertise by relying on a local and fair supply chain, carefully selected spices and production without using frozen meat.

Made from French pork, this genuine Morteau sausage benefits from the Protected Geographical Indication (PGI). It is stuffed into a natural pork casing and is recognizable by its traditional wooden cleat. Smoking it in a smokehouse gives it the rustic character and smoky flavors typical of this Franche-Comté specialty.

Offered raw and to cook, it requires gentle cooking to retain its tenderness. Submerge it, without pricking it, in gently simmering water and cook for approximately 35 to 45 minutes.

Morteau sausage pairs wonderfully with lentils, potatoes, stews, cabbage or sauerkraut. Once cooked, it can also be cut into beautiful slices and served with homemade mashed potatoes or added to a Franche-Comté salad.
