The Amiotte company has been manufacturing charcuterie products from its local Franche-Comté region since 1939: Morteau sausages, Montbéliard sausages, smoked cooked hams, etc. Faithful to traditional recipes, the Amiotte master smokers smoke all Morteau sausages with fir wood in "tuyés" (see photo). This smoking method, typical of high-altitude regions, takes into account the various parameters of wind, temperature, atmospheric pressure and humidity. Mastering this delicate know-how ensures the quality and flavor of the sausage, which must smoke without drying out. The Amiotte Morteau sausage won the gold medal at the Concours Général Agricole Paris 2016.

Appreciated by amateurs for its frank and smoky taste and its soft and juicy texture, Morteau sausage is a sausage made from coarsely ground pork that can only be produced in Franche-Comté. Generally cooked in water, it can also be grilled and can then be used for many recipes, from the most classic such as lentil sausage or sauerkraut, to the most original, as an accompaniment to fish for example. Morteau sausage is easily recognizable by its amber color due to smoking, its cylindrical shape and its closure with a wooden dowel.
