Faithful to traditional recipes, the master smokers at Maison Amiotte smoke all their Morteau sausages over fir wood in traditional "tuyés" (see photo). This smoking method, typical of high-altitude regions, takes into account various parameters such as wind, temperature, atmospheric pressure, and humidity.

Mastering this delicate skill ensures the quality and flavor of the sausage, which must smoke without drying out.
