In the Cher department, in the Centre-Val de Loire region, mythical hills stand out in the world of wine. The Sancerre AOC produces red and rosé wines and is particularly celebrated for its white wines.
This wine-growing region is known and its merits have been praised since the Middle Ages. And for good reason: located on hills carved by the Loire , the vines often benefit from a location on hillsides as well as rich soils.
THE southwest of the Sancerre region is found on siliceous clay soils, rich in flint, which give firm and mineral wines as well as the famous aroma of flint. To the west, the soils are made up of “caillotes”: limestone soils which give wines with very present floral notes. The rest of the vineyard is cultivated on soft limestone based on marls, called white lands.
The wines produced there have better aging potential. When it comes to grape varieties, Sauvignon is king. This grape variety is very sensitive to its terroir and acquires floral, fruity, citrus and even flint notes through the different vineyards of the region. Much more anecdotal, Pinot Noir is also cultivated to make red wines. and rosés. These offer a dry wine with melted tannins and powerful aromas of cherry, mirabelle plum or morello cherry.
