Sainte-Maure de Touraine can come in a variety of forms. White, covered with a fine white bloom, it gradually takes on a bluish-gray hue as it ages (at least 10 days), generally after about twenty days. It is also made with charcoal, though. This technique was originally intended to better protect it.
It's very convenient to eat on a platter. Its delicate bouquet struggles to express itself in cooking: for hot dishes, it's better to use generic "Sainte-Maure." It's best eaten as is, simply with a good accompaniment. With avocado, for example, in a millefeuille: a slice of cheese, a slice of avocado, etc.
