Saint-Nectaire, an uncooked pressed cheese made from cow's milk, comes from Saint-Nectaire in the micro-region of Monts Dore, a spa town in Auvergne.

This rustic Auvergne cheese, known for its soft and supple texture, was a favorite on the royal table of Louis XIV, having been introduced there by a Marshal of France, Henri de Sennecterre.

The Saint-Nectaire farmhouse cheese, whose rind can be grayish or orange, is matured for at least 28 days and leaves no one indifferent.
