The term Reblochon comes from the Savoyard dialect, combining "reblocher," meaning to milk a second time, and "rablassa," which refers to marauding. Made from raw milk, this Reblochon offers a delicate, mild, and melting flavor, sometimes enhanced by a hazelnut note appreciated by connoisseurs.

Opt for farm cheeses, whose more pronounced aroma appeals to connoisseurs; they constitute about 20% of production and are distinguished by a green casein plaque applied when fresh, which then integrates into the rind.
