Veal Topside offers a unique experience in terms of flavor and tenderness. It can be grilled, pan-fried, or roasted, depending on whether it's cut into slices, cubes, cutlets, steaks, or roasts. Its versatility allows for endless preparations. For quick cooking on a plancha, opt for thin slices and sear them quickly: 1 to 2 minutes are enough.

Veal Topside is a thick cut of meat, taken from the muscular hindquarters between the thigh and the loin, in other words, the rump, which is called sirloin in beef. It is undoubtedly one of the finest cuts of veal for roasting.

Whatever the cooking method, it must reflect the delicacy and finesse of veal. Grilled, pan-fried, or roasted veal should be consumed slightly pink or medium-done to preserve its moistness.
