Valençay is one of the rare goat cheeses associated with a historical anecdote. Talleyrand owned a castle in Valençay, in Indre. He had asked his farmers to make a cheese in honor of Napoleon I for his return from the Egyptian campaign. He was offered a goat cheese in the shape of a pyramid.
But in the meantime, Talleyrand is said to have fallen out with Napoleon and, out of spite, he decided to symbolically cut off his head by removing the top of the pyramid.
Valençay owes its ashy rind to a spraying of charcoal powder during its manufacture.
It is eaten fresh or dry, but never very dry, because it then loses its qualities.
