Valençay is one of the few goat cheeses associated with a historical anecdote. Talleyrand owned a château in Valençay, in the Indre department. He asked his farmers to make a cheese in honor of Napoleon I upon his return from the Egyptian campaign. He was offered a pyramid-shaped goat cheese.
But in the meantime, Talleyrand is said to have fallen out with Napoleon and, out of spite, decided to symbolically cut off his head by removing the top of the pyramid.
Valençay owes its ashy rind to a spraying of charcoal powder during its production.
It is eaten fresh or dry, but never very dry, because then it loses its qualities.
