Black Astarac Bigorre hen 150 days old, shredded ±1.8kg

The Poule Noire d'Astarac Bigorre, a breed of black Gascon chicken, almost disappeared with the industrialization of agriculture. However, determined breeders have persevered in breeding these exquisite poultry, whose exceptional taste is today praised by the greatest chefs. Current breeders, most of them young, are committed to producing sustainable quality, by carefully managing the entire production process from embryo to delivery, and by offering these free-range poultry a spacious space of 10 m2 per bird (compared to 2.50 m2 for the Label Rouge breeder). Jean-Paul Beuste (photo), a passionate breeder, presents this living heritage: "The Black Hen of Astarac Bigorre has crossed the ages to end up on your plate. This breed has retained its hunting character, which gives a firm and tender flesh with a rich and unique taste thanks to its marbling. Its capons and festive pullets offer aromas of cereals, milk and hazelnuts.
