White pepper is piper nigrum picked when ripe and from which its covering, the pericarp, has been removed. This white pepper is crushed with lemon peel into pieces.
Lemon-flavored white pepper can be used in salads, white meats, white fish and sauces. It can be ground on purees and poultry as well. It is also called oyster tasting pepper because it goes particularly well with these seafood.
