This ancho pepper, or dried poblano pepper (Caspicum annuum variety), originates in a geographical area located between Colombia and the United States. A mildly spicy green pepper, it is the basis of many Mexican dishes because its mildness allows it to be used anywhere. The ancho pepper contains a low level of capsaicin and therefore ranks low on the Scoville scale.

It is found in Mexico in Chile relleno or nogada, two national dishes, but also as the main ingredient for making stuffings.

An excellent natural flavor enhancer, ancho pepper goes well with most white meats, fish and vegetables. At the end of cooking, it enhances the flavor of starchy foods (potatoes, rice, pasta, etc.).
