In Provençal, Picaoudou means "small, spicy cheese." Since the 14th century, it has been made using the traditional method, using raw, whole goat's milk. Behind a bold, capricious, and sometimes spicy taste, Picodon hides a tender center and subtle flavors of hazelnut and mushroom.
