Established in Saint-Flour since 1926, Maison Julhes is a long-standing tripoux specialist that continues to preserve expertise dedicated to regional Auvergne recipes and local flavors.

These small tripoux consist of a stuffing made with veal tripe, seasoned with garlic, onions, parsley, and spices, then wrapped in lamb tripe. Each tripoux is carefully rolled and tied according to tradition.

They are then simmered for more than 6 hours in a white wine and tomato sauce. This slow cooking allows the flavors to develop and gives the tripoux their rich character and melt-in-the-mouth texture.

To enjoy them in the traditional Auvergne style, serve them piping hot with simple steamed potatoes. They can also be served with yellow lentils, yellow peas, or truffade for an even more generous meal.
